Recipe: Gluten-Free Nut Butter Cookie
Over the weekend, we tested out a gluten-free nut butter cookie that only used 3 main ingredients! At Surf Mei Mei, we like quick simple solutions to satiate our voracious post-surf appetite. You can whip this up and have it ready all under 30 minutes (remember to preheat the oven @ 350F / 180C )
- 1 cup unsweetened nut butter
- 1 egg
- 0.5 cup honey
- 0.5 tsp baking soda
- 0.5 tsp vanilla extract
- 0.25 tsp salt
- Whisk honey + egg -> Mix in peanut butter -> Add remaining ingredients
- Grease pan with oil or butter -> Spread batter thinly -> sprinkle seeds for decoration
- Bake for 15 minutes @ 180C / 350F -> Let it cool and slice to serve
Keeps for 3-5 days in an air tight container
